I bought Food & Travel Kitchen Culture Oct 08 issue. There are a lot of Indian cooking and a section with baking with children. This is my 1st time bought this magazine. So I decide to do the brownie. It has to bake for 50 to 60 mins. However, when about 20 mins, I see that my brownie is already baked. I quickly take out and let it to cool. Still burnt on the top layer. Remove the top layer and the side which is hard. The texture is not bad. Maybe try again.

 

Ingredient

200g butter

185g baking chocoate chips

1 cup brown caster sugar (I use 100g)

1 cup self-raising flour, sifted

2 tbsp cocoa powder

4 eggs

 

Method

  1. Preheat oven to 180 deg C.
  2. Place butter and chocolate chips in a deep stainless bowl. Melt over simmering hot water. Set aside to cool.

  3. In a large bowl, combine flour, cocoa powder, sugar and eggs and mix well.

  4. Add in melted chocolate and butter mixture, mix till well combined.

  5. Pour into a square cake loaf and bake for 50 to 60 mins until cooked. To test, insert a cake skewer into the centre of the brownie. When it comes out clean, it is done.

I use almond instead of peanuts. Before I mix it with the rest, I toast the almond and it smells good. The ingredients are here.

 

Peanut & Chocolate Chip Brownies October 12, 2008

Today I bake peanut & chocolate chip brownies which I want to try it out quite sometimes. The recipe is taken from The Straits Times dated 18th Sept 2008. I bought the small packet for roasted peanut and didin’t check the weight. It weigh only 100g that’s why I use only 100g. As for the sugar, I cut down by 20g and afraid it is too sweet for me.

Ingredients

130g butter

160g caster sugar (I use 140g only)

2 eggs

200g plain flour

1 heaped tsp baking powder

150g roasted unsalted peanuts (I use only 100g)

100g chocolate chips

Method

1. Preheat oven to 180 deg C.

2. Cream the butter and sugar together then add the eggs one at a time beating well after each one.

3. Sift the flour and baking powder together  then stir into the creamed mixture.

4. Stir in the peanuts and chocolate chips. The mixture will be quite stiff.

5. Line an oven baking tray with baking paper.

6. Roll tablespoonfuls of the mixture into balls and place on the tray. Slightly flatten the top of each with a fork.

7. Bake for around 15 to 20 mins then cool on a wire rack.
