Honey & Chocolate Muffins August 23, 2009

I don’t know why my muffins are so hard and not so soft as those sell in the bakery. Did they add something which the book did not tell? Or my method is wrong even though I follow the instructions from the book? Can someone tell me why? All the muffins I did in the past, it didn’t rise.

Ingredients :

300g plain flour

2-1/2 tsps baking powder

Pinch of salt

50g granulated sugar

270g chocolate chips (reduce to 250g)

250ml milk

4 tbsp butter, melted

1 large egg, lightly beaten

2 tbsp honey

2 tsp vanilla essence

 

Method :

  • Preheat the oven to 200 deg C.
  • Arrange baking cups on baking sheets.
  • Sift the flour, baking powder and salt into a large bowl. Stir in the sugar & chocolate chips. Make a well in the centre.
  • Stir in the milk, butter, egg, honey & vanilla.
  • Spoon the batter into the cups, filling each 3/4 full.
  • Bake for 15-20 mins or until a toothpick inserted into the centre comes out clean.
  • Cool the muffins on racks.

Today I try do something new from the book title “The Chocolate Cookbook” which I borrow from the National Library. My 1st (I put some chocolate chips on top) and 2nd batch looks different. I put more for the 2nd batch and it seems to rise but not for the 1st batch.

Ingredients :

300g plain flour

75g unsweetened cocoa powder

2 tsps baking powder

Pinch of salt

125g butter, softened

250g granulated sugar

1 tbsp honey

2 large eggs

180ml milk

60g semisweet chocolate chips

 

Method :-

  1. Preheat the oven 180 deg C.
  2. Line with paper baking cups.
  3. Sift the flour, cocoa, baking powder and salt into a large bowl.
  4. Beat the butter, sugar and honey in a large bowl with an electric mixer at medium spped until creamy.
  5. Add the eggs, one at a time, beating until just blended after each addition.
  6. With mixer at low speed, gradually beat in the dry ingredients, alternating with the milk. Stir in the chocolate chips.
  7. Spoon the batter into the prepared cups.
  8. Bake for 20-25 mins or until a toothpick inserted into the centres comes out clean.
  9. Cool the muffins on racks.
