This is my 2nd time making bread using the oven. I like Happy Home Baking’s blog. She has a lot of bread and cakes. However, my bread is different from hers. Not so soft and the crust is hard. I didn’t really make the dough using hand but with my breadmaker.

Ingredients : -

150g bread flour

150g cake flour

5g active dry yeast

3g salt

125g milk

1 egg

60g caster sugar

50g butter

(1 egg, beaten, for glazing)

 

Method : -

  • Put all ingredients into the pan of the breadmaker except butter.
  • Set to “Dough” function and stop it after 10 mins.
  • Add in the butter and set the function to “Dough” again (1-1/2 hrs).
  • Take out the dough. Test it whether the dough has been fully proofed, press a finger into the dough and withdraw quickly. It should leave a deep impression and spring back very slowly.
  • Punch out the gas produced. Let the dough rest for 15 mins.
  • Divide the dough into 60g portions. Arrange dough in a greased pan. Rest for another 15 mins.
  • Brush the top with whole egg mixture.
  • Bake for about 15 mins in a preheated oven at 190 deg C. Remove from the pan and cool on the wire rack.
 

Chocolate Vanilla Drop Cookies November 30, 2008

Ingredients : -

150g plain flour

2 tbsp cocoa powder

1 tsp baking powder

1/8 tsp salt

175g butten, softened

100g sugar

1/2 tsp vanilla essence

 

Method : -

  • Preheat the oven at 175 deg C.
  • Sift flour, cocoa powder, baking powder and salt into a bowl.
  • Beat the butter and sugar in a large bowl with an electric mixer until creamy.
  • Mix in the vanilla & dry ingredients.
  • Drop tablespoon (i use teaspoon) of the dough 2 inches (5 cm) apart.
  • Bake for 10-15 mins.
  • Leave in the pan for a while before transfer to the wire racks.

I bought 3 books written by Alex Goh. Recently I am crazy with baking books. 2 books with his autograph. I have not yet master anything or even know how to use my oven well and yet spending $$$ on books. It will take quite sometimes for me to start doing what he wrote in the books. hehehe……..

Chocolate Oatmeal Cookies November 9, 2008

Ingredients

210g – all purpose flour

45g – cocoa powder

1 tsp baking soda

1/2 tsp salt

230g – butter, room temperature

150g – sugar

1 tsp vanilla extract

4 tbsp thin rolled oats

150g – chocolate chips

Method

  1. Preheat oven to 180 deg C.
  2. Whisk flour, cocoa powder, baking soda and salt together in a bowl.
  3. Use electric mixer, beat butter in large bowl until fluffy. Add sugar and vanilla extract; beat it unitl blended.
  4. Add flour mixture and beat until moist clumps form
  5. Mix in oats with spatula until evenly distributed.
  6. Add chocolate chips and knead gently to blend.
  7. Bake for 15 mins or until the centre is slightly firm and top is cracked.

This cookies taste nice. If my hubby says nice, then it is nice. He hardly says the cookies is nice as I am still in learning stage. hehehe……. :D

I bought Food & Travel Kitchen Culture Oct 08 issue. There are a lot of Indian cooking and a section with baking with children. This is my 1st time bought this magazine. So I decide to do the brownie. It has to bake for 50 to 60 mins. However, when about 20 mins, I see that my brownie is already baked. I quickly take out and let it to cool. Still burnt on the top layer. Remove the top layer and the side which is hard. The texture is not bad. Maybe try again.

 

Ingredient

200g butter

185g baking chocoate chips

1 cup brown caster sugar (I use 100g)

1 cup self-raising flour, sifted

2 tbsp cocoa powder

4 eggs

 

Method

  1. Preheat oven to 180 deg C.
  2. Place butter and chocolate chips in a deep stainless bowl. Melt over simmering hot water. Set aside to cool.

  3. In a large bowl, combine flour, cocoa powder, sugar and eggs and mix well.

  4. Add in melted chocolate and butter mixture, mix till well combined.

  5. Pour into a square cake loaf and bake for 50 to 60 mins until cooked. To test, insert a cake skewer into the centre of the brownie. When it comes out clean, it is done.
