To me, this is another butter cookies. Just because it uses the fork to make the pattern on it. It is called Fork Cookies. I don’t really know how to use my oven. It seems not even in baking. Some are darker colour than the rest especially those cookies place in the corner. I still need to try an error for each batch I bake. The 1st batch is the above and the 2nd batch is slightly burnt even though using the same timing.

Ingredients

115g butter, softened

50g caster sugar

150g self-raising flour, sifted

Method

  1. Preheat the oven to 180 deg C. Lightly grease two baking sheets. Beat the butter in a bowl until creamy, then beat in the sugar. Stir in the flour and bring the dough together with your hands.
  2. Shape into walnut-size balls and place on the baking sheets, spacing well apart. Dip a fork in cold water and use to flatten the cookies.
  3. Bake for 10-12 mins, until pale brown. Leave to cool on the baking sheets for a few mins, then transfer to a wire rack to cool.

I use almond instead of peanuts. Before I mix it with the rest, I toast the almond and it smells good. The ingredients are here.

Today I did not use the ready mix for the pancakes. I read from one of the blogger that she uses the following ingredients for the pancakes. I don’t even have a chance to taste it as my boys finish it before I can take a photo of it.

Ingredients :

2 eggs

2 tbsp honey (I use only 1-1/2 tbsp)

2 tbsp sugar (I use only 1-1/2 tbsp)

100g plain flour

1 tsp baking powder

80ml fresh milk

Method :

  1. Combine eggs, sugar & honey in the bowl.
  2. Sieve flour and baking powder into the bowl and mix them well.
  3. Gradually add in milk and mix well.
  4. Leave the batter at room temperature for about 30 mins before using it.
  5. Grease a frying pan or a griddle and warm to middle heating range.
  6. When the edge of the pancake becomes dry and rough with bubbles, turn it and cook until the other side browns evenly.

I try another recipe for the bread using my Bluesky breadmaker. My colleague finds it from here.

Ingredients :

250g bread flour

1-1/2 teaspoon instant yeast

3 tablespoon sugar (I use 2 tablespoon)

1 teaspoon salt

2 eggs (medium)

50g butter (soften at room temperature)

50ml milk

Method :

  1. Assemble the pan and kneader blade. Add in milk, lightly beaten eggs and butter, followed by sugar and salt. Spoon in the flour and make a slight indentation in the centre of the flour. Add the yeast in the indentation.
  2. Shut the lid and set to the “Sweet” function, select loaf size as 1lb and set as Light crust.
  3. At the end of the programme, lift the pan out of the machine and turn out onto a cooling rack. Leave to cool before slicing.
 

Everyday Bread – Unsuccessful October 12, 2008

I try to bake the bread instead of using the breadmaker. Me, too careless and forget to read instruction. Just remember to write the ingredients and the temperature of the oven. I will try again next week.

Reason why fail is due to : -

1. Never read instruction carefully

2. Too cold milk that cause the yeast may not activate. If too hot, it will kill the yeast.

 

Peanut & Chocolate Chip Brownies October 12, 2008

Today I bake peanut & chocolate chip brownies which I want to try it out quite sometimes. The recipe is taken from The Straits Times dated 18th Sept 2008. I bought the small packet for roasted peanut and didin’t check the weight. It weigh only 100g that’s why I use only 100g. As for the sugar, I cut down by 20g and afraid it is too sweet for me.

Ingredients

130g butter

160g caster sugar (I use 140g only)

2 eggs

200g plain flour

1 heaped tsp baking powder

150g roasted unsalted peanuts (I use only 100g)

100g chocolate chips

Method

1. Preheat oven to 180 deg C.

2. Cream the butter and sugar together then add the eggs one at a time beating well after each one.

3. Sift the flour and baking powder together  then stir into the creamed mixture.

4. Stir in the peanuts and chocolate chips. The mixture will be quite stiff.

5. Line an oven baking tray with baking paper.

6. Roll tablespoonfuls of the mixture into balls and place on the tray. Slightly flatten the top of each with a fork.

7. Bake for around 15 to 20 mins then cool on a wire rack.

 

Peanut Butter Ball October 11, 2008

My little boy insists to do what his teacher told him about Peanut Butter Ball. So we go and buy honey from the NTUC. He has a chance to do it while I wait for dough to rise (making pizza for dinner).

Ingredients

2 tablespoon honey

2 tablespoon peanut butter

2 tablespoon milk powder

Some cornflakes

Method

Just mix honey, peanut butter and milk powder.

Make a small ball and stick the cornflakes on it.

Not bad. It sweet and crunchy.
