I go to United Square Popular and happen to see this book. I buy it immediately. Since I will learn to do bread, I need something to read and test it. I have not master my cookies and here comes bread.

I surf the net to find out how to use Bluesky bread maker. Came across a blog who has tested the recipe using the bread maker to knead and bake the bread. It takes 3 hrs to bake the bread using the bread maker. My hubby said that this bread is too expensive (using too much electricity). Anyway, I need to test it before bake the bread in the oven. Today I am a bit sotong. I use fresh milk instead of milk powder. No wonder my bread is a bit too sweet. Kekeke…… Now I plan to get pullman tin for bread.

Ingredients :-

168g water

24g butter

5g salt

45g sugar

300g bread flour

18g milk powder

5g instant yeast

Method :-

  1. Pour water into pan of the bread machine, followed by butter, sugar and salt. Cover with flour, milk powder and make a small indent with your finger on the flour. Place yeast inside the small indent.
  2. Fit the pan into the bread machine and set to Basic (1) programme. Select 1b or 1.5b loaf size and set to light or medium crust setting. (I select 1b and medium)
  3. Once baked, remove the loaf from the pan and let it cool ona wire rack for at least an hr before slicing.

My plan is to do muffins but I don’t have fresh milk at home. So I choose to do chocolate chip cookies. My hubby didn’t chocolate as he prefers plain cookie. However, my elder son loves it as long there is chocolate.

Ingredients

115g butter, softened

115g caster sugar

1 egg, lightly beaten

1 tsp vanilla essence

175g plain (all-purpose) flour

175g plain (semisweet) chocolate chips (I use only 160g)

Method

1. Preheat the oven to 180 deg C.

2. Cream the butter and sugar together in a bowl with a wooden spoon or an electric mixer until pale and fluffy.

3.  Beat in the egg and vanilla essence.

4. Sift the flour over the butter mixture and fold in with the chocolate chips.

5. Drop tablespoonfuls of the mixture on to the prepared baking sheets. Leave plenty of space between the cookies to allow for spreading.

6. Flatten each cookie slightly with the back of a fork, keeping the shape as even as possible.

7. Bake the cookies for about 10 mins or until golden.

Well, today I try to do suji cookie. It doesn’t seem to be like suji cookie. Usually it is white and soft. My suji cookie are brown and overcooked at the base too. I follow the instructions from one of the blog which I have read that day. I use half of the ingredients. Altogether I have baked 3 trays : 1st tray is burnt (bake for 25 mins), 2nd tray – overcooked at the base (bake for 18 mins) and 3rd tray – slightly better but not white in colour and hard (bake for 15 mins). I will try it again and maybe search for other suji cookie recipe.

Ingredients :

400g ghee

350g icing sugar

700g plain flour

100g full cream milk powder

1. Sieve the flour with milk powder.

2. Cream ghee with icing sugar till light and fluffy.

3. Fold in the flour gradually till a soft dough is formed. Leave dough for 30 mins.

4. Bake in a preheat oven at 150 deg C for 25 mins.

I have another new toy in collection. My colleague bought Bluesky (housebrand from Carrefour) bread maker at Suntec. Yesterday they were having offer at $59.90. Thanks to Sally who bought and told me. Now I have more things to try. Actually I have a list of things to do for my baking. Will add in another list of things to do for my bread maker. Hehehe……….

I get the recipe from Wokking Mum. I find that my muffin is too dry like biscuits. Maybe I bake for too long. The raisin on top tastes over-cooked too. I will try it again and set my time to 20 mins. The muffin is not too sugar, just nice.

Ingredients

100g butter

50g sugar

1/4 teaspoon salt

2 eggs

250g cake flour or all-purpose flour

1 teaspoon baking powder

80g milk (I use fresh milk)

250g dried cranberries (I use 100g of raisin)

Method

1. Beat butter, sugar and salt till light.

2. Add eggs gradually and beat well each time before adding more.

3. Fold in sifted flour and baking powder into mixture.

4. Add milk slowly and mix well.

5. Stir in the raisin and mix well.

6. Pour batter into muffin cups.

7. Bake at preheated oven at 175 degree C for about 25 mins or till done.

This round I didn’t use the ready mix biscuits. I use the recipe from the book which I bought last month. Very simple to do it. I add M&M chocolate as a decoration for the cookie. There are 3 batches and the last batch is my little boy helps me to place the chocolate.

175g (3/4 cup) unsalted butter, at room temperature, diced

90g (1/2 cup) golden coaster sugar

250g (2-1/4) cups plain flour

1. Put the butter and sugar in a bowl and beat until light and fluffy. Add the flour and, using your hands, gradually work it in  until the mixture forms a smooth dough.

2. Preheat the oven to 160 deg C.

3. Bake for 20 mins until just beginning to turn brown. Transfer to a wire rack to cool.
