I have not tried this cake. But I would like to keep the receip here so that in future, I can try it out.

Ingredients :

40g raisins

40g dried cranberries

40g dried apricots (sliced thinly)

Orange juice and zest of 1/2 an orange

85g unsalted butter (room temperature)

40g sugar

5 eggs yolks

5 egg whites

90g sugar

170g cake flour (sifted)

1/4 teaspoon baking powder

60g walnuts (coarsely chopped)

Method :

Soak dried fruit and zest in orange juice for about one hour.

Preheat oven to 175 deg C and line the bottom of the loaf tin with grease-proof paper.

Cream butter and sugar until white and creamy. Add yolks one at a time (make sure each yolk is wehll incorporated before adding the next one) and fold in the dried fruit.

Put flour, baking powder and walnuts in a bowl.

Whisk egg whites and 90g of sugar unitl at a firm peak stage (to make a meringue).

Gently fold in flour mixture and meringue alternately into the creamed mixture. Pour into loaf tin and bake for 35 to 45 mins (unitl cak eturns golden brown).

Tip :

Create your own uniique fruitcake by concocting your own medley of dried fruit such as dried apples, figs or prunes.

Recently I bought a book on cookie. It cost $16.90 from Popular. Quite worth it as it is very thick just like a bible. A1 has already placed this order for the cookie for me to try it out. Let’s see when will it be as I have quite a number of things in my mind to try it out. :P

 

Marbled Chocolate Cupcakes August 17, 2008

Don’t know where go wrong. Some of the cupcakes are fully cooked whereas the rest are not cooked at the bottom. The top of cupcakes are nice to eat but the bottom has to take a risk to see whether it is cooked. I don’t think I will bring to the office and offer them. I will try again but not next week.

Ingredients

175g soft margarine (I use butter, maybe this is the problem)

175g caster sugar

3 eggs

175g self-raising flour

2 tbsp milk (use fresh milk)

55g plain chocolate, melted

Method

  1. Put the margarine, sugar, eggs, flour and milk in a large bowl and using the electric hand whisk, beat together until just smooth.
  2. Divide the mixture between 2 bowls. Add the melted chocolate to one bowl and stir together until well mixed. Using a teaspoon and alternation the chocolate mixture with the plain mixture.
  3. Bake the cupcakes in a preheated oven, 180 degrees C for 20 min or until well risen. Transfer to wire rack to cool.

Can you tell which part is cheese?

This pizza is with pepperoni.

Since I am on leave today, I make a pizza for 3 of us for lunch. This is big pizza and I put half cheese and half pepperoni. A1 prefers cheese and A2 likes pepperoni. I manage to make the pizza thin only the centre but the edge. It looks quite thick. I will try it again as A1 prefers small individual pizza. You can refer to my previous blog on pizza cust.

 

Hershey’s Dutch Cocoa Super Moist Cake Mix August 10, 2008

I bought this box of cake mix about a month ago. I have not tried to do a cake yet. Today I want to try it out. When I pour the water, I know that it will not turn out nice and good. Too much of water. I bake for 35 mins and the base of the centre is still liquid. The picture will tell you. Will upload later. I accidently deleted the photos from my camera.

1 box of Betty Crocker Hershey’s Dutch Cocoa Super Moist cake mix

1-1/3 cup of water

1/2 vegetable oil (use extra virgin oil)

3 eggs

 

Jumbo Chocolate Chip Cupcakes August 10, 2008

I borrow a book of muffins & cakes from my colleague. Choose a simple recipe and try out. The texture is a bit rough than my previous cupcakes.

Ingredients

100g soft margarine

100g caster sugar

2 large eggs

100g self-raising flour

100g plain chocolate (use semi sweet chocolate chip)

Method

1. Put muffin paper cases in a muffin pan. I use those ready make cups.

2. Put the margarine and sugar to beat then add the eggs and flour in a large bowl and using an electric hand whisk. Beat together until just smooth. Fold in the chocolate chips. Spoon the mixture into the paper cases.

3. Bake the cupcakes in a preheated oven at 190C for 20-25 mins or until well risen and golden brown. Transfer to a wire rack to cool.

 

Cheese & Ham Sandwich August 10, 2008

I do a simple sandwich for my son to eat. Personally, I love it and it is quite healthy breakfast.

1 slice of cheese

1 slice of ham

2 slices of bread

Margarine – unsalted

Apply both side of the breads and use a non-stick pan to fry on 1 side. Once it turns golden brown, turn the other side. Add the ham and cheese and take the other slice of bread cover the ham and cheese. It is healthy as it doesn’t need to use oil.
