Chocolate Chips Cupcake July 27, 2008

Since I start to bake cookies, I want to try out to do cupcakes. Yesterday I happened to come across this blog on cupcake. So today, I give it a try by adding chocolate chips which is my sons’ favourite.

Self-raising flour – 175g

Sugar – 150g (I use castor sugar)

Eggs – 3

Butter (soften) – 150g

Vanilla esence – 1 tsp

Chocolate chips

Method :

  • Preheat the oven at 180 degree C.
  • Put the eggs into a bowl and beat lightly with fork.
  • Mix the butter and sugar together and then place all the ingredients and mix it.
  • Put the mixture into the cup.
  • Heat in the oven at 180 degree C for 18 mins.

I think I have put too much of the mixture in the cup. Most of it overflow from the cups. My elder son says that there is not enough of chocolate chips. Well, I will try again using my colleague’s receip another time.

Ingredients :

250 gm Digestive Biscuits/ Marie Biscuits

200 gm Philadelphia Cream Cheese

125 gm Butter

3 tablespoons Fine Sugar (Optional) – opt out

3 teaspoons Gelatine

3/4 cup of syrup (Peach/Pineapple) – prefer pineapple as it gives a bit sour taste

1 tin Nestle Cream

Method :

  1. Pound/Grind the biscuits until very fine and mix well with butter into a dough.
  2. Press dough into a tray using a tablespoon. Leave it to set in the refrigerator. This will be the crust.
  3. Mix the cream cheese with sugar till soft by using a fork. (Note : If you are not using any sugar then no need to do this step).
  4. Melt gelatine with fork in 1/4 cup of hot water by stirring briskly.
  5. Bring the cream cheese to melt over low fire. Once it has melted slowly add in 3/4 cup of syrup followed by gelatine then nestle cream. Stir the mixture well. (Note : Stir it well to ensure no lump)
  6. Once the mixture is well stir, pour onto the crust.
  7. Let it to set/cool before putting the whole tray in the refrigerator.

Optional : You can add peach/pineapple to the cheese cake. Cut the peach/pineapple into small pieces, then mix into the mixture before pouring into the crust.

 

Homemade Pizza July 12, 2008

I try to do the pizza crust for dinner. Extract the recipe from Happy Home Baking.

Ingredients :

(make two 12′ pizza dough)

250g bread flour

1 teaspoon fast-acting dry yeast

1 teaspoon salt

150ml lukewarm water

1 tablespoon extra-virgin olive oil

Method :

  1. Grease two 30cm (12in) round pizza trays. (or use baking tray, lined with parchment paper).
  2. Sift flour and salt into a mixing bowl. Mix in the yeast. Make a well in the centre and add the water and olive oil. Using your hands, gradually work the ingredients together to form a soft dough. If the dough is too dry add a few drops of water.
  3. Turn dough out onto a lightly floured work surface and knead for 10 mins until the dough becomes smooth and elastic. Shape dough into a round ball and place in a lightly oiled mixing bowl. Cover with cling wrap and leave to rise for 1 hr or until double in size.
  4. Turn out the risen dough onto a lightly floured work surface and knock it down to release the air. Give it a few gently kneading. Divide dough into 2 portions. Shape into two balls, cover loosely with cling wrap and let it rest for about 10mins.
  5. Roll or press out each portion to a round, about 12″ in size. Place dough on prepared tray.
  6. Spread pizza sauce over the dough to within 1 cm (0.5 inch) of the edge. Arrange a layer of grated cheese, followed by preferred toppings. Sprinkle the top all over with grated cheese.
  7. Bake in a preheat oven at 200 degC for 15-20 mins or until the crust has turned golden and the cheese has melted. Serve warm.
